To use the 12 eggs white remaining when you do a sponge
cake, you can make this delicious muffins…
Ingredients
(makes 36 muffins)
1 egg
12 egg whites
80g chocolate powder
140g chocolate bar
100ml hot water
Zest of two oranges
260g sugar
400g self-raising flour
60g butter
1 teaspoon baking powder
Kitchen equipment
6×6 muffin tins
36 paper cases
Preparation
Preparation time: 25 min
Cooking time: 20-25 min
1. Pre-heat the oven to 180°C;
2. Mix chocolate powder with hot water;
3. Then, add the egg, sugar and zest of two oranges and mix well for 5 minutes;
4. Next, melt the chocolate with butter. Add the melted chocolate at the mixture prepared in step 3 and mix;
5. Then, add the flour and baking powder and mix well;
6. After that, beat the 12 egg whites;
7. Next, involve the egg whites in cake batter;
8. Put the paper cases into muffin tins and divide the muffin batter among the paper cases; 9. Finally, bake in the oven for 20-25 minutes.
